Beef Stifado

You'll find this on pretty much every Greek restaurants menu and my version below tastes pretty much identical to the ones I've had on my holiday trips.

This version uses beef although it is often made with veal which does have a different flavour.

This serves 2

Ingredients

400 g braising steak, cut into serving sized chunks
1 medium onion chopped
250 g small onions or shallots, peeled and left whole
200 g chopped tomatoes
2 cloves garlic chopped
1 cinnamon stick
1/2 tsp pimento (all spice)
2 tbsp red wine vinegar
around a cup of water
2 bay leaves
a little flour
salt & pepper
3 tbsp extra virgin olive oil

Method

Heat the oil in a flame proof casserole dish then add the beef and fry until browned on all sides.

Add the onions and garlic to the pan and fry for a couple of minutes.

Add about 1 tsp flour and stir around for a bit.

Add all remaining ingredients except the small onions. Bring to boil then cover and transfer to a medium-low oven and cook for around 2 1/2 hours or until the meat is tender. Add more water if needed.

Add the onions, mix well and cook for a further 30 minutes.

Remove the cinnamon and bay leaves and serve.
