CHICKEN YAKHNI

1 Kg Chicken Quarters (skinned)
6 cloves Garlic
2 med Red Onions
6 Cinnamon Sticks
1 tsp whole Cumin seed
1 tsp whole Cloves
1 large bunch fresh Coriander
1 tsp whole Black Pepper
3.5 litres Water
Method
Get all ingredients together and finely chop the Corander. Put water in a large pan or saucepan and place it on high heat.
Except Coriander, put all the ingredients in water.
Cover the pan & bring to the boil.
Once boiling, turn the heat down and let the mixture simmer for an hour or more.
Once cooked Strain the soup through cheese cloth.
Dish into bowls & garnish with coriander.
Alternatively the chicken can be set aside & fried with rice.
