This has been one of my childhood favourites and living so far away from home I had forgotten how good it can taste until a recent holiday back home visiting mum. I asked her for the recipe and this is it.

Steamed Porl Ribs with black beans

500gm lean pork ribs

Marinade
2tsp black beans
2tsp julienned ginger
2tsp chopped fresh garlic
2tsp oyster sauce
2tsp light soy sauce
2tsp chinese cooking wine/sherry
2tsp red wine vinegar
1tsp sugar
sliced red chillies to taste
1tsp cornflour
3tbsp water

Clean pork ribs and mix in the marinade.
Add freshly ground white (or black) pepper to taste.
Marinade for a minimum of 2 hours.

Place in a dish which will allow for gravy to form and steam for about 30minutes until cooked.

Serve with side dish of stir fried vegies and rice.
