Putting the 'mental' into experimental, here's a fave dish of mine, best eaten whilst well hammered

Ingredients:

1 Large can of SPAM/Pork luncheon meat etc.
1 Can Patak's Vindaloo Paste
1 Large onion
1/2 cup of old red wine dregs (white whine, beer, sherry..
basically any booze lying around that's close to hand at the time)
2 handfuls of frozen peas (any frozen veg'll do, just bung it in)

Rice:
1 cup of any rice u got handy
Spices (optional)
2 green cardamoms
4-5 pieces of cassia bark
sprinkle of fennel seeds
1/2 tsp. of Harissa paste
1/2 tsp. of Tamarind paste

Splosh some oil in a large wok or pan & heat to cooking temperature.
At the same time put a pan of lightly salted water on to boil.
Skin & finely chop the onion (remembering folks to mind those fingers! as
sharp knives & booze = lost digits) Add to pan & fry over a gentle heat.
When soft, cube the Spam & add to onions. Turn the heat up to seal the Spam chunks
At this point the water should be boiling so add the rice 7 optional spices.

When onions are a nice golden brown add WHOLE can of vindaloo paste & stir in.
Then fill the empty can 1/2 full of red wine & swill round to clean the can, then add to pan.
Stir in frozen peas &/or misc. veg & cook for about 15 mins.

Drain rice, rinse with boiling water & remove bark & cardamom pods.
Bung on plate, pour curry over & eat with plain crisps or wads of bread & butter.
